Instructions
1-First, prepare all ingredients by shredding the cooked chicken, chopping vegetables, and measuring out spices and liquids to streamline cooking.
2-In a pan, melt butter over medium heat, sauté onions until translucent, then add mixed vegetables, cooking until tender.
3-As you stir in flour to the pan mixture, cook for 2 minutes to form a roux, then gradually whisk in chicken broth and milk until thickened.
4-After the sauce thickens, add shredded chicken to the mix, season with herbs and spices, and cook for an additional 3 minutes. Let it cool so it’s easier to handle.
5-Once cooled, shape the filling into small croquettes, dip each into beaten eggs, then coat evenly with breadcrumbs.
6-Heat oil in a deep pan to 350°F (175°C), fry croquettes in batches until golden brown and crisp, about 3-4 minutes each side.
7-Finally, remove croquettes, drain excess oil on paper towels, and serve warm with your favorite dipping sauce.
