Instructions

1-First, preheat the oven to 170°C (fan 150°C, gas mark 3). Place the 1.25 kg pork belly in a roasting tin, cover tightly with foil, and roast for 2 hours and 30 minutes. In a small pan, combine 150 g marmalade, 1 teaspoon dried chilli flakes, 2 tablespoons soy sauce, and the juice of 1 orange; heat until it bubbles and reduces to a syrupy consistency.

3-Pour the glaze over the pork pieces, toss gently to coat, and roast for an additional 5 minutes until glazed. Serve with cocktail sticks for a fun, easy-to-eat option. For dietary adaptations, substitute pork with tofu and adjust cooking times to around 30 minutes.
