🎄 This Christmas Cookies Recipe features vanilla sugar biscuits that are easy to make and perfect for festive baking.
🍪 The cookies offer a delightful balance of crispness and softness, customizable to your preference, making them ideal for holiday celebrations.

  • Total Time: 25 minutes
  • Yield: Approximately 40 cookies

Ingredients

– 225g (1 cup) unsalted butter, softened (or use salted butter and skip added salt)

– 1 cup caster or superfine sugar (granulated sugar works too)

– 1 1/2 teaspoons vanilla extract

– 1 large egg (about 55-60g or 1.9-2oz)

– 3 cups plain or all-purpose flour

– 3/4 teaspoon baking powder

– 3/4 teaspoon salt

Instructions

1-Getting Started: First, preheat your oven to 180°C (350°F), or 160°C if you’re using a fan oven. Line two baking sheets with parchment paper to prevent sticking and make cleanup easy. This prep sets the stage for even baking and golden edges.

2-Getting Started: Next, in a large bowl, beat the softened butter and sugar together until creamy, which takes about one minute. This step mixes the flavors and creates a smooth base. Then, add the egg and vanilla extract, mixing until everything combines into a uniform blend.

3-Mixing and Shaping the Dough: Slowly add the flour, baking powder, and salt to the bowl, mixing gently until the dough forms. It might look a bit clumpy, but that’s okay it means it’s ready. Lightly flour your work surface, turn out the dough, pat it into a flat shape, and divide it into two discs for easier handling.

4-Mixing and Shaping the Dough: Roll the dough to about 0.3cm thick for crispier biscuits or 0.6cm for softer ones, using extra flour to avoid sticking. Use cookie cutters to shape them, then carefully transfer to your prepared baking sheets. Don’t forget to gather the scraps and roll them out again for more biscuits.

5-Baking and Cooling: Bake the biscuits for 10 minutes, rotating the trays halfway through for even cooking. Watch for a pale golden surface and lightly browned edges they’re done when they look just right. Let them cool completely on the trays to set their texture and flavor.

Notes

🍥 No chilling time needed for the dough, making this recipe quick and convenient.
🔄 Dough scraps can be re-rolled and used again to minimize waste.
🎨 Decorate cookies with frosting, melted chocolate, or a dusting of icing sugar for festive appeal.
