Ingredients

– 2 1/4 cups all-purpose flour (plus extra for rolling and surface)

– 1 large egg, room temperature

– 2 teaspoons pure vanilla extract

– 1/4 to 1/2 teaspoon almond extract (optional)

– 3 cups confectioners’ sugar

– 1/2 teaspoon pure vanilla extract (or replace with water for white icing)

– 2 teaspoons light corn syrup

– 4.5 to 5 tablespoons room temperature water

– Pinch of salt

– Optional sprinkles for decoration

Instructions

1-First, whisk together the flour, baking powder, and salt in a bowl and set it aside this builds the base for your dough. Next, cream the butter and sugar until smooth, then mix in the egg, vanilla, and almond extract to add that yummy flavor. Gradually stir in the dry ingredients on low speed, adding a bit more flour if the dough feels too sticky.

2-Divide the dough into two parts and roll each one between floured parchment papers to about 1/4 inch thick for easy handling. Pop the rolled dough in the fridge for 1 to 2 hours, or up to 2 days, to firm it up and prevent spreading. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

3-Cut the chilled dough into fun shapes and space them 3 inches apart on the sheets, then bake for 11 to 12 minutes until the edges turn lightly browned. Let the cookies cool on the sheet for 5 minutes before moving them to a wire rack. For the icing, blend the confectioners’ sugar, vanilla extract, corn syrup, water, and a pinch of salt until it’s just right add food coloring if you want, and decorate using dipping or piping bags.
