Instructions
1-Preheat oven: Preheat oven to 350Β°F with the rack in the middle position. Grease mini loaf pans and line with parchment paper, or use parchment strips for brownie pans.
2-Whisk together: Whisk together the egg, granulated sugar, brown sugar, pumpkin puree, oil, and vanilla in a medium bowl until smooth.
3-Sift or sprinkle: Sift or sprinkle the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet ingredients using a mesh strainer, then whisk until smooth with no dry streaks.
4-Evenly scoop: Evenly scoop the batter into your prepared pans and smooth the tops for an even bake.
5-Sprinkle: Sprinkle 2 to 3 tablespoons of cinnamon sugar generously on top, then gently swirl it into the batter surface with a toothpick or knife, being careful not to mix it fully.
6-Bake: Bake based on pan size: 20-23 minutes for a brownie pan or 28-30 minutes for two mini loaf pans, until a toothpick inserted comes out mostly clean.
7-Cool the bread: Cool the bread in the pans on a wire rack for 10-15 minutes before removing to cool completely.

π This is a small batch recipe; double the ingredients for a 9×5-inch loaf pan and start checking doneness at 50 minutes.
