πŸ‹ Fresh, zesty flavors that brighten up your dinner routine with minimal effort
🌿 Simple yet elegant dish perfect for weeknight dinners or special occasions

  • Total Time: 70 minutes
  • Yield: 4-6 servings

Ingredients

– 1 whole chicken, 3 1/2 to 4 pounds, spatchcocked or flattened (preferably kosher and already brined)

– 1 tablespoon olive oil

– salt (to taste)

– pepper (to taste)

– paprika (to taste)

– 1 cup fresh herbs (such as basil, thyme, rosemary, oregano, parsley, cilantro, tarragon, dill, chives) for the herb sauce

– 2 green onions for the herb sauce

– 2 garlic cloves (or 2 teaspoons grated or minced garlic, frozen cubes can be used) for the herb sauce

– Lemon zest from 1 lemon, plus optional 1-2 tablespoons lemon juice for the herb sauce

– 6 tablespoons olive oil (extra-virgin olive oil optional) for the herb sauce

– 1/2 teaspoon kosher salt for the herb sauce

– 1/4 teaspoon black pepper for the herb sauce

– 1/2 teaspoon red pepper flakes (optional) for the herb sauce

Instructions

1-Getting started with this classic herb chicken begins with prepping your ingredients for smooth cooking. First, take your spatchcocked chicken and pat it dry to help the seasonings stick and achieve a crisp finish. Mix the olive oil with your salt, pepper, and paprika in a bowl to create a simple rub that enhances the chicken’s natural flavors.

2-Next, coat the chicken evenly with the seasoning mixture and let it sit for a few minutes to absorb the tastes. For the herb sauce, blend the fresh herbs, green onions, garlic, lemon zest, olive oil, kosher salt, black pepper, and optional red pepper flakes in a food processor until smooth. Preheat your oven or grill to the right temperature while the chicken rests.

3-Now, place the chicken on a baking sheet or grill and cook until it reaches a safe internal temperature, usually around 165Β°F. Once done, let it rest before slicing and drizzling with the herb sauce for extra moisture and flavor. Addinggrilled chicken marinades from other recipes can offer even more variations to try.

4-Gather and prepare all ingredients as listed above.

5-Apply the olive oil and seasonings to the chicken.

6-Prepare the herb sauce by combining fresh herbs and other elements.

7-Cook the chicken thoroughly, checking for doneness.

8-Rest and serve with the sauce for the best results.

Notes

🌑️ Use a meat thermometer to ensure perfectly cooked chicken without overcooking
πŸ‹ For extra lemon flavor, stuff lemon halves inside the chicken cavity before roasting
🌿 Mix and match herbs based on what’s available – rosemary and thyme work especially well with lemon
