🥩 Create a perfectly seasoned meatloaf that brings back fond memories of home-cooked family dinners
🍽️ Enjoy this classic comfort food that’s easy to make and delivers incredible flavor with every bite

  • Total Time: 1 hour 20 minutes
  • Yield: 8 servings

Ingredients

– 2 lbs (about 900 g) ground beef (80% or 85% lean)

– 1 medium onion (approximately 1 cup), finely chopped

– 1 teaspoon oil

– 3 garlic cloves, minced

– 2 large eggs

– 2 tablespoons ketchup

– 3 tablespoons fresh parsley, finely chopped

– 3/4 cup Panko or gluten-free breadcrumbs

– 1/3 cup milk

– 1 teaspoon Italian seasoning (or to taste)

– 1 teaspoon salt

– 1/2 teaspoon ground black pepper

– 3/4 cup ketchup

– 1 1/2 teaspoons white vinegar

– 2 tablespoons brown sugar

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

Instructions

1-Getting started with this classic meatloaf dinner is easier than you might think, and it begins with a few simple prep steps. First, preheat your oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or foil for easy cleanup. Sauté the chopped onion in 1 teaspoon of oil over medium heat for 5-7 minutes until softened and golden, then set it aside to cool this step helps mellow the onion’s sharpness and adds depth to the flavor.

2-Next, in a large bowl, combine the ground beef, cooled onions, minced garlic, eggs, ketchup, parsley, breadcrumbs, milk, Italian seasoning, salt, and black pepper. Gently mix by hand until just combined to keep the meatloaf tender; overmixing can make it tough. Shape the mixture into a loaf about 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet, ensuring it’s even for uniform cooking.

3-Now, bake uncovered at 350°F (175°C) for 40 minutes to start building that juicy interior. While it’s in the oven, whisk together the glaze ingredients in a small bowl. After the initial baking time, spread the glaze evenly over the meatloaf for a sticky, caramelized topping. Return it to the oven for another 20 minutes or until the internal temperature reaches 160°F (71°C). For those using ground turkey or chicken, aim for 165°F (74°C) to ensure safety. Let the meatloaf rest for 10-15 minutes before slicing, which allows the juices to redistribute and makes for cleaner cuts.

Notes

🥩 Avoid overmixing the meat mixture to keep the meatloaf tender and juicy
🍽️ Bake on a sheet pan instead of a loaf pan for crispy edges and better glaze adherence
🌡️ Always check the internal temperature – 160°F for beef, 165°F for turkey or chicken
