Ingredients
6 ounces coconut milk (organic preferred)
6 ounces heavy cream (can substitute with extra coconut milk for dairy-free)
2 tablespoons maple syrup
1/4 teaspoon vanilla extract
Pinch of salt (plus extra for sprinkling on chocolate coating, if desired)
1/3 cup shredded coconut
3 ounces dark chocolate (use dairy-free chocolate if needed; reduce amount if drizzling)
1/2 teaspoon coconut oil
Pinch of salt
Instructions
1-While the popsicles freeze, melt 3 ounces of dark chocolate and 1/2 teaspoon of coconut oil over low heat or in the microwave, stirring often until just melted, then add a pinch of salt for extra flavor.
2-Once frozen, carefully remove the popsicles from the molds and place them on a wax paper-lined tray back in the freezer.
3-Drizzle or pour the melted chocolate over each one using a ladle, then quickly return them to the freezer to set. If you like, sprinkle a bit more salt on top for a tasty twist.
4-Repeat for all popsicles and store them covered in the freezer; let them sit at room temperature for a few minutes before serving to soften just right.
Notes
