Ingredients

– 1½ cups milk (whole or low fat)

– ½ cup granulated sugar

– 1 teaspoon salt

– 2 large eggs

– ⅓ cup butter or shortening (softened)

– 5 cups all-purpose flour

– sufficient quantity canola oil for frying

– ½ cup butter (melted)

– 2 cups powdered sugar

– 2 teaspoons vanilla extract

– 5 to 7 tablespoons evaporated milk or water

Instructions

1-Activate the yeast: Activate the yeast by dissolving it in warm milk (about 110°F) with a teaspoon of sugar. Let it sit for 5-10 minutes until it’s frothy. This kicks off the fermentation and sets the stage for a perfect rise.

2-Mix ingredients: In a large mixing bowl, combine the flour, remaining sugar, and salt. Add the activated yeast mixture, eggs, and melted butter. Mix until a sticky dough forms don’t worry if it’s a bit messy at first!

3-Knead the dough: Knead the dough on a floured surface for about 8-10 minutes until it’s smooth and elastic. This helps build that chew without making it tough.

4-First rise: Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm spot for 1 to 1 1/2 hours or until it’s doubled in size. Patience here pays off, folks!

5-Shape and second rise: Roll out the dough to about 1/2-inch thickness on a floured surface. Use a doughnut cutter to shape them, then place on parchment-lined sheets, cover, and let rise for another 30-45 minutes.

6-Fry the doughnuts: Heat oil in a deep fryer or pot to 350°F. Fry the doughnuts in batches until golden brown, about 1 minute per side. Drain them on paper towels to keep them from getting soggy.

7-Make the glaze: For the glaze, mix melted butter, powdered sugar, and vanilla, then add evaporated milk or water bit by bit until it’s smooth. Dip the warm doughnuts in and let the excess drip off.
