Ingredients
3 cups of flour
1 teaspoon of salt
2 teaspoons of baking powder
2 cups of sugar
Orange zest from 2 large oranges
1 and 1/2 cups of buttermilk
1 cup of vegetable or canola oil
4 large eggs, slightly beaten
2 tablespoons of fresh orange juice
1 teaspoon of vanilla extract
2 cups of fresh cranberries, halved
1 and 1/2 cups of powdered sugar
2 tablespoons of fresh orange juice
1 and 1/2 teaspoons of orange zest
Instructions
1-First, preheat your oven to 350Β°F (175Β°C) and grease a loaf pan to prevent sticking.
2-In a medium bowl, whisk together the dry ingredients like flour, baking powder, and salt until well combined.
3-In a separate large bowl, mix the wet ingredients: beaten eggs, oil, buttermilk, sugar, orange zest, orange juice, and vanilla extract.
4-Gradually add the dry mixture to the wet ingredients, stirring gently to combine without overmixing, which keeps the bread tender. Fold in the halved cranberries carefully to distribute them evenly. Pour the batter into the greased loaf pan and smooth the top with a spatula.
5-Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
π For the best orange flavor, use fresh organic oranges for zesting.
π Do not overmix the batter to keep the bread light and tender.
βοΈ Fresh cranberries can be substituted with frozen ones; just do not thaw before adding to the batter to avoid bleeding.
