Ingredients
2 cups plus 4 tablespoons all-purpose flour
2 tablespoons white sugar
1/2 teaspoon salt
1 1/2 sticks (12 tablespoons) cold, unsalted butter, cut into 1/4-inch cubes
6 ounces (3/4 package) cold cream cheese, cut into 1/4-inch cubes
3 to 5 tablespoons cold heavy whipping cream
Instructions
1- In a large bowl, whisk together the flour, sugar, and salt to mix them evenly.
2- Cut the cold butter and cold cream cheese into 1/4-inch pieces, then use a pastry blender or food processor to mix them into the flour until it looks like coarse crumbs with pea-sized bits.
3- Drizzle 3 tablespoons of cold heavy whipping cream over the dough and mix with a spatula; add up to 2 more tablespoons as needed until the dough forms moist clumps.
4- Divide the dough into 2 pieces, press each into a flat disk, wrap tightly in plastic wrap, and chill in the fridge for at least 1 hour. The dough can sit refrigerated for up to 2 days if you need to prepare ahead.
Notes
βοΈ Use cold butter and cream cheese for a tender, flaky texture.
πͺ A pastry blender or food processor efficiently cuts fats into the flour.
π₯ Add heavy cream gradually to achieve the right dough consistency.
