Ingredients

– 4 tablespoons butter

– 1 tablespoon oil

– 2 cups diced onions

– 4 cloves minced garlic

– 1 1/2 pounds fresh brown mushrooms, sliced

– 4 teaspoons chopped thyme, divided

– 1/2 cup dry Marsala wine or any dry red or white wine

– 6 tablespoons all-purpose flour

– 4 cups low sodium chicken broth or stock

– 1-2 teaspoons salt, adjusted to taste

– 1/2-1 teaspoon cracked black pepper, adjusted to taste

– 2 beef bouillon cubes, crumbled

– 1 cup heavy cream or half and half (can be substituted with evaporated milk)

– 1/2 tablespoon fresh chopped parsley for serving

– 1/2 tablespoon fresh chopped thyme for serving

Instructions

1-Gathering Your Ingredients: First, make sure you have all your ingredients ready. Butter and oil are heated in a large pot over medium-high heat to begin building the flavor base.

2-Cooking the Base: Next, onions are sautéed for 2 to 3 minutes until softened, then garlic is cooked until fragrant for about 1 minute. Add mushrooms and 2 teaspoons of thyme, cooking for 5 minutes to let their flavors shine.

Pour in the wine and cook for 3 minutes, which adds a nice depth. Sprinkle flour over the mixture, stir well, and cook for 2 minutes to thicken.

3-Simmering and Finishing: Add stock, mix it in, and bring to a boil. Reduce heat to low-medium, add salt, pepper, and crumbled bouillon cubes, then cover and simmer for 10-15 minutes, stirring occasionally until thickened. Lower heat to low, stir in cream or half and half, and gently simmer without boiling. Adjust seasoning, mix in parsley and the remaining thyme just before serving, and enjoy it warm.

Notes
