Ingredients

– 12 oz gluten-free pasta for base of the dish

– 2 tablespoons olive oil

– Β½ cup chopped onion

– 1 jalapeno

– 2 cups spinach to boost nutrition

– 1 cup Alfredo white sauce

– 7 oz pesto

– Β½ tablespoon Italian seasoning

– Β½ tablespoon red pepper flakes

– β…“ cup Parmesan cheese to add creaminess

– 2 balls burrata cheese to add creaminess

– β…“ cup mozzarella cheese to add creaminess

– 1 cup milk for thinning the sauce

– Salt and cracked black pepper to taste

– β…“ cup pine nuts for crunch

– Butter for greasing the baking dish

Instructions

1-Cook 12 oz of pasta al dente according to package instructions.

2-Heat 2 tablespoons of olive oil in a pan and fry β…“ cup of pine nuts until they are light golden.

3-Add Β½ cup of chopped onion and 1 jalapeno, then cook until the onions turn translucent.

4-Add 2 cups of spinach and cook until softened, about 2 minutes.

5-Stir in 7 oz of pesto and 1 cup of Alfredo white sauce, then cook for 2-3 minutes. If the sauce becomes too dry, add 1 cup of milk or pasta water as needed.

6-Add Β½ tablespoon of Italian seasoning and Β½ tablespoon of red pepper flakes, then mix well.

7-Incorporate the cooked pasta, β…“ cup of Parmesan cheese, cracked black pepper, and salt to taste, then remove from heat.

8-Grease a baking dish with butter.

9-Spread half of the creamy pesto pasta mixture into the dish, and add a bit of milk if it looks dry.

10-Top with half of the β…“ cup of mozzarella cheese and one of the 2 balls of burrata cheese, broken apart.

11-Bake at 350 degrees Fahrenheit for 20 minutes or until the edges are golden and the cheese is bubbly. Cover with foil if desired.

12-Broil for an additional 1-2 minutes to brown the top.

13-If preparing more, repeat the steps for the second batch, depending on the size of the baking dish.
