Ingredients

– 750 g chestnut mushrooms, wiped clean and sliced

– 70 g butter

– ½ tablespoon olive oil

– 2 shallots, thinly sliced

– 1 heaped tablespoon fresh thyme leaves

– 3 fat cloves garlic, minced

– 150 ml double or heavy cream

– 40 g hard Italian cheese (like pecorino), finely grated

– 3 tablespoons toasted pine nuts

– 1 heaped teaspoon chopped flat-leaf parsley

– ¼ teaspoon freshly ground black pepper (plus more for serving)

– A small pinch of sea salt

– 250 g linguine pasta (dry weight)

Instructions

1- Heat olive oil in a large skillet or sauté pan, then add sliced shallots and cook for about 5 minutes until they turn translucent.

2- Cook 250 g of linguine pasta according to the package instructions until it’s just right.

3- Add 70 g of butter to the skillet and cook the 750 g of sliced chestnut mushrooms in batches until they’re browned, then stir in 1 heaped tablespoon of fresh thyme leaves and 3 fat cloves of minced garlic for about one minute until fragrant. Season with a small pinch of sea salt and ¼ teaspoon of freshly ground black pepper.

4- Pour in 150 ml of double cream, add 40 g of finely grated hard Italian cheese, and simmer for about 5 minutes while stirring occasionally to blend the flavors.

5- Add about 30 ml of the pasta cooking water to the sauce and stir for a silky texture, then lower the heat to keep it smooth.

6- Drain the pasta and mix it into the mushroom sauce, then stir in 1 heaped teaspoon of chopped flat-leaf parsley and 3 tablespoons of toasted pine nuts.

7- Check the seasoning one last time and serve right away, topping with extra grated cheese and black pepper for that final touch.

Notes

🍄 Use chestnut mushrooms for best flavor; white button mushrooms can be a substitute.
🍳 Avoid overcrowding the pan and excessive stirring to prevent mushrooms from becoming slimy.
💧 Adding pasta water to the sauce helps thicken it and improves sauce adherence to pasta.
