Ingredients
1/4 cup butter
1/2 white onion diced
1 clove garlic minced
1/4 cup flour (optional)
3 cups chicken broth
2 cups half-and-half (or a substitute of half cream and half milk)
8 ounces of softened cream cheese
1 1/4 cups shredded Swiss cheese (cheddar or mozzarella can also be used)
2 cups shredded or diced rotisserie chicken
1 cup diced ham
Instructions
1-Gather and prep: Dice the 1/2 white onion, mince 1 clove garlic, shred or dice 2 cups rotisserie chicken, and dice 1 cup ham. Soften 8 ounces cream cheese.
2-Melt butter: In a large pot over low heat, melt 1/4 cup butter. SautΓ© onion until soft, 2 to 3 minutes.
3-Add garlic: Stir in garlic and cook 30 seconds until fragrant.
4-Incorporate flour: If using, stir in 1/4 cup flour and cook 1 minute.
5-Whisk liquids: Gradually add 3 cups chicken broth and 2 cups half-and-half, whisking smooth.
6-Mix cream cheese: Add softened cream cheese, stir until smooth.
7-Melt cheese: Stir in 1 1/4 cups shredded Swiss cheese until fully melted.
8-Finish with proteins: Add chicken and ham, heat through. Season if needed, serve warm.
