Ingredients
200 grams dried pasta or 300 grams fresh pasta
1 tablespoon olive oil
1 chicken breast (or 2 if preferred)
1 tablespoon flour
1 tablespoon butter
3 garlic cloves, finely chopped
1 tablespoon fresh rosemary leaves, roughly chopped
ΒΎ cup single or light cream
1 teaspoon black pepper
1 tablespoon lemon juice
50 grams freshly grated parmesan cheese
Lemon zest and extra rosemary for garnish

Instructions
1-Cook pasta in well-salted boiling water, undercooking dried pasta by 1 minute. Reserve 1 cup of pasta water before draining.
2-Flatten chicken breast to 1-1.5 cm thickness. Season with salt and black pepper, then dust with flour.
3-Heat olive oil over medium-high heat. Pan-fry chicken 2 minutes per side until cooked through. Wrap in foil and set aside.
4-In the same skillet, melt butter over medium heat. Gently fry garlic without browning.
5-Add rosemary and cook for 30 seconds.
6-Pour in cream and bring to a gentle simmer (do not boil).
7-Add parmesan cheese in 2-3 batches, letting it melt between additions.
8-Stir in black pepper and lemon juice.
9-Add ΒΌ cup reserved pasta water. Simmer for 2-3 minutes to thicken sauce.
10-Add cooked pasta to the sauce. Toss and let bubble for 1-2 minutes.
11-Slice chicken and serve either on top of or mixed into the pasta.
12-Garnish with extra rosemary, lemon zest, and parmesan if desired.
