Ingredients

– 8 oz package light cream cheese, softened slightly

– 1/2 cup packed light brown sugar

– 2 teaspoons ground cinnamon

– 1/8 teaspoon ground nutmeg

– 8 oz package light sour cream

– 1 teaspoon vanilla extract

– 4 pounds crisp, sweet apples, chilled (e.g., Gala, Jazz, Golden Delicious)

– 2 cups cold water

– 2 tablespoons lemon juice

– 1 cup chopped walnuts

– 3/4 cup dried cranberries

Instructions

1-Make the dressing: In a mixing bowl, use an electric hand mixer to whip together the light cream cheese, brown sugar, cinnamon, and nutmeg on high speed until light and fluffy, about 3 minutes. Add the sour cream and vanilla extract, then blend until combined. Chill this mixture until you’re ready to serve.

2-Prepare the apples: In a medium bowl, combine the cold water and lemon juice. Dice the apples into cubes, removing the core, and place the pieces into the lemon water mixture to rest for about 1 minute. Drain them on paper towels to reduce browning this step keeps your salad looking vibrant.

3-Assemble the salad: Transfer the drained apple cubes to a large bowl. Add about three-quarters of the chopped walnuts and dried cranberries, along with the chilled cream cheese dressing. Toss gently until the apples are evenly coated for that perfect mix of flavors.

4-Garnish and serve: Sprinkle the remaining walnuts and cranberries over the top. Keep the salad chilled and serve within an hour to maintain the best texture and flavor, making it ideal for quick family meals.
