Ingredients

– 2 boneless, skinless chicken breasts (about 1.3 lbs or approximately 590 grams total)

– 1/2 teaspoon Italian seasoning

– 1/2 teaspoon salt

– 1/4 teaspoon freshly cracked black pepper

– 1/4 cup all-purpose flour (about 30 grams)

– 2 tablespoons olive oil

– 2 tablespoons butter, divided

– 1 whole garlic bulb (about 8-9 cloves)

– 1 cup chicken broth (240 ml)

– 3/4 cup heavy cream (180 ml)

– 1/2 teaspoon garlic powder

– Salt and pepper to taste

Instructions

1-Slice the chicken breasts into thinner cutlets or use thin-cut breasts to help them cook evenly.

2-Season the chicken evenly with Italian seasoning, salt, and pepper, then coat the pieces in flour for a nice sear.

3-Heat olive oil and 1 tablespoon of butter in a skillet over medium heat, then cook chicken for about 4 minutes on each side until golden and fully cooked. Remove from skillet and keep warm.

4-Peel and smash the garlic cloves to release their flavor.

5-In the same skillet, add the remaining 1 tablespoon butter and garlic cloves, then sauté on medium-low heat for about 3 minutes until browned and fragrant, stirring often.

6-Pour in chicken broth, heavy cream, and garlic powder, then stir well while scraping up the browned bits from the pan. Simmer the sauce for 8-10 minutes to let it reduce and thicken by half.

7-Adjust seasoning with additional salt and pepper as desired to taste.

8-Return the cooked chicken to the skillet, spoon the sauce over it, and heat through for a few minutes.

9-Optionally, garnish with freshly chopped parsley before serving to add a fresh touch.

Notes

🥄 Heavy cream can be substituted with half-and-half for a lighter sauce.
🍳 For a thicker sauce, add a roux made from 2 tablespoons flour and 1 tablespoon melted butter or a slurry of 1 tablespoon cornstarch mixed with 1-2 tablespoons cold water.
