Ingredients
– 3/4 lb fettuccine or penne pasta
– 1 lb shrimp, peeled and deveined
– 1 tablespoon oil
– 1 small onion, finely chopped
– 2 tablespoons unsalted butter
– 1 garlic clove, minced
– 1/3 cup white wine
– 2 cups heavy whipping cream
– 1/3 cup grated Parmesan cheese
– Salt and pepper to taste
– Sprinkle of paprika
– Parsley or basil for garnish (optional)
Instructions
1-First, prepare your ingredients as noted in the list above. Cook the pasta in salted water following the package directions until it’s just right, then drain it without rinsing to help the sauce stick better.
2-Next, season the shrimp with salt, pepper, and a bit of paprika. Heat the oil in a skillet over medium-high heat and cook the shrimp for 1-2 minutes per side until they turn opaque and pink. Set them aside once done.
3-In the same skillet, melt the butter and sauté the chopped onion until it’s golden. Add the minced garlic and cook for another minute to bring out its aroma.
4-Pour in the white wine and let it reduce by about 75%, scraping the pan to mix in all the good bits. Stir in the heavy cream and let it simmer for 2 minutes, then add the Parmesan cheese and stir until smooth. Take it off the heat before it boils to keep the sauce creamy.
5-Season the sauce with more paprika, salt, and pepper as needed. Finally, mix the shrimp and cooked pasta into the sauce. Garnish with parsley, basil, extra Parmesan, or cracked pepper if you like.
Notes
🍋 Substitute white wine by omitting it and adding juice from half a lemon after the cream. Adjust seasoning accordingly.
🍝 Do not rinse pasta after cooking to help sauce adhere better.
⏲️ Avoid overcooking shrimp to prevent rubbery texture.
