2-First, prick the 4 large sweet potatoes with a fork and bake them directly on the oven rack for 50-60 minutes until they’re tender. Once cooled, peel and mash the flesh in a bowl, then stir in half the Parmesan cheese, the 1/2 cup grated asiago or manchego cheese, salt, and pepper. Pop this mixture in the freezer to chill briefly it helps with shaping later.
