First, begin by combining the dry rub ingredients: 1 teaspoon salt, 1 teaspoon pepper, 1 tablespoon Italian seasoning, 2 teaspoons smoked paprika, 1 teaspoon garlic powder, and ¼ teaspoon red pepper flakes if you want a bit of heat. This mix will give your hens that smoky, flavorful boost.

2-Next, pat the hens dry with paper towels to remove any excess moisture, which is key for that crispy skin. Season them generously inside and out with the dry rub use your hands to really work it in for the best results. Preheat your oven to 425°F (220°C) to ensure even roasting.
