Ingredients

– 2 avocados, diced

– 1/4 cup chopped cilantro (about half a bunch)

– 1 teaspoon sea salt

– 1/8 teaspoon black pepper

Instructions

1- Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro into a large salad bowl.

2- Drizzle with olive oil (or sunflower oil) and lemon juice.

3- Toss gently to combine.

4- Just before serving, toss with sea salt and black pepper.
