Ingredients

– 8 ounces chopped dates

– 1 cup boiling milk

– 1 teaspoon baking soda

– 2 eggs

– 1/2 cup brown sugar

– 8 tablespoons softened butter

– 1 teaspoon vanilla

– 1 1/3 cups (170 grams) flour

– 1/2 teaspoon salt

– 1 teaspoon baking powder

– 1/3 cup unsalted butter (approximately 5 1/3 tablespoons)

– 1 1/4 cups heavy cream

– 3/4 cup brown sugar

– pinch of salt

– 1 teaspoon vanilla

– 2 teaspoons cognac or brandy (optional)

Instructions

1-Preheat your oven: Preheat your oven to 350ยฐF (175ยฐC). Grease and line an 8ร—8 inch metal pan with parchment for easy release.

2-Chop dates and soak: Chop 8 ounces dates and soak in 1 cup boiling milk mixed with 1 teaspoon baking soda for 10 minutes to soften and cut bitterness.

3-Mash the dates: Mash the dates into a paste once cooled slightly.

4-Cream ingredients: In a bowl, cream 2 eggs, 1/2 cup brown sugar, 8 tablespoons softened butter, and 1 teaspoon vanilla.

5-Fold in date paste and dry ingredients: Fold in the date paste, then add 1 1/3 cups (170 grams) flour, 1/2 teaspoon salt, and 1 teaspoon baking powder. Mix gently.

6-Bake the batter: Pour batter into the pan and bake for about 40 minutes until a toothpick comes out clean.

7-Make toffee: Heat 1/3 cup unsalted butter, 1 1/4 cups heavy cream, 3/4 cup brown sugar, pinch salt, and 1 teaspoon vanilla in a skillet over medium heat. Whisk until lightly boiling (3-4 minutes).

8-Finish toffee: Remove toffee from heat, rest 5 minutes, stir in 2 teaspoons cognac (optional).

9-Cool cake and prepare sides: Cool cake 30 minutes. Cut thin strips off each side for better soaking.

10-Add toffee and cut cake: Spread a thin layer of toffee in the pan, place cake back, poke holes with toothpick, cut into 9 squares.

11-Pour remaining toffee and let sit: Pour remaining toffee over, let sit at least 30 minutes.
