Ingredients
– Organic pitted dates (quantity as desired)
– Organic peanut butter or nut butter of choice (enough to fill the dates about 75%)
– Organic dry-roasted or raw peanuts or nuts of choice (a few nuts per date)
– Dairy-free dark chocolate (quantity sufficient for dipping or drizzling)
– Maldon salt, flaky, for sprinkling on top
Instructions
1-First, prepare your dates by pitting them if needed and slicing each one lengthwise about halfway to make a pocket.
2-Then, line a small baking sheet or plate with parchment paper and pop it in the freezer to get it cold.
3-Next, open up the dates a bit, space them out on the parchment, fill each one about 75% full with nut butter, add a few nuts on top, and pinch them closed.
4-After that, freeze the stuffed dates for 15-20 minutes to help them firm up.
5-While they’re chilling, melt your dairy-free dark chocolate and let it cool slightly so it doesn’t melt everything else.
6-Once the dates are ready, take them out and either dip them fully in the chocolate or drizzle it over the top, then sprinkle on that flaky Maldon salt for a perfect finish.
7-Finally, pop them back in the freezer for 20-30 minutes until the chocolate hardens, and you’re all set to enjoy.
