    1kg large new potatoes, halved for the base

    4 tablespoons olive oil for taste enhancement

    4 cloves garlic with skins on

    1kg side salmon with skin for the protein

    1 large bunch of coriander, roughly chopped for flavor and freshness

    2 green chillies, roughly chopped for flavor and freshness

    1 clove garlic, chopped

    1 teaspoon ground cumin for taste enhancement

    A large pinch of caster sugar

    Juice of 1 lemon

    3 tablespoons olive oil for the zhoug sauce

    Instructions

    1-Creating this Salmon With Crispy Potatoes And Zhoug dish is straightforward and fun. Begin by boiling the new potatoes in lightly salted cold water for 15 minutes until tender, then drain and cool slightly. This step ensures they develop the perfect crispiness when roasted.

    2-Preheat your oven to 200°C (fan 180°C) or gas mark 6. Lightly crush the potatoes with the side of a large knife, place them in a roasting tin, drizzle with olive oil, add the garlic cloves, and toss well. Roast for 35 minutes, turning halfway to get that golden crunch.

    3-Next, push the potatoes aside in the tin and place the salmon skin-side down. Season it well and roast for another 25 minutes until it’s cooked through and flaky. Meanwhile, blend all the zhoug sauce ingredients coriander, green chillies, garlic, cumin, caster sugar, lemon juice, and olive oil until smooth.

    4-Serve the crispy potatoes on a platter, top with the salmon, and spoon over the zhoug sauce for a vibrant finish.
