– 28 g (¼ cup) espresso powder (fine ground, not instant)

– ½ teaspoon salt

– 127 g (4.5 oz) bittersweet chocolate, roughly chopped

Instructions

1-First, preheat your oven to 350 degrees F and grease a mini muffin pan with softened butter to prevent sticking.

2-In a small bowl, melt the 85 g (3 oz) bittersweet chocolate and 150 g (¾ cup) neutral oil together over simmering water, then set it aside to cool for a few minutes.

3-Next, in a large bowl, whisk 200 g (1 cup) granulated sugar, 142 g (⅔ cup) brown sugar, 3 eggs (room temperature), and 2 teaspoons vanilla extract. Beat this mixture on high speed with an electric mixer for about 5-6 minutes until it doubles in size and forms a shiny texture, which helps create that perfect top.

4-Then, slowly pour the cooled chocolate and oil mixture into the egg mixture while mixing on low speed to combine evenly. Add 120 g (1 cup) all-purpose flour, 63 g (¾ cup) dutch process cocoa powder, 21 g (¼ cup) black cocoa powder, 28 g (¼ cup) espresso powder, and ½ teaspoon salt, mixing until mostly combined without overworking the batter.

5-After that, fold in the 127 g (4.5 oz) roughly chopped bittersweet chocolate evenly throughout the batter. Fill each mini muffin cup about ¾ full with the batter, ensuring even distribution for uniform baking.

6-Finally, bake for 15-18 minutes or until a toothpick inserted comes out with a few moist crumbs, indicating they’re fudgy inside. Allow the bites to cool in the pan for a few minutes before removing, and repeat with any remaining batter.
