1 pound chicken breasts, pounded to an even thickness

2 tablespoons olive oil

2 tablespoons lime juice (about 1 lime)

1 teaspoon chili powder

1 teaspoon brown sugar

3/4 teaspoon black pepper

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/4 to 1/2 teaspoon chipotle chili powder (optional for more heat)

1/4 teaspoon salt

2 medium ripe but firm avocados, chopped

1 cup cherry tomatoes, quartered or 2 Roma tomatoes, seeded and chopped

Fresh corn from 1 ear

1/3 cup finely chopped red onion

1/2 red bell pepper, chopped

1 jalapeno pepper, diced with seeds separated

2 tablespoons finely chopped cilantro

1 garlic clove, minced or 1/4 teaspoon garlic powder

2 tablespoons lime juice

1/4 teaspoon ground cumin

1/4 teaspoon salt

1/8 teaspoon black pepper (or more to taste)

Instructions

1-Season the chicken by combining all Fiesta Lime Rub ingredients and rubbing them evenly over the 1 pound of chicken breasts.

2-Marinate the chicken for at least 30 minutes at room temperature or up to 8 hours in the fridge, then bring it back to room temperature before cooking.

3-Prepare the salsa base by mixing all Avocado Salsa ingredients except the avocados; refrigerate for 30 minutes to 24 hours.

4-Gently fold in the chopped avocados just before serving to keep the salsa fresh.

5-Cook the chicken: For stovetop, heat a greased grill pan over medium-high heat, cook undisturbed for 3-5 minutes, flip, cover, reduce to medium, and cook 5-7 minutes more until it reaches 165°F. For grilling, preheat to 375-450°F, grease grates, and cook 5-7 minutes per side.

6-Serve the sliced chicken topped with the vibrant Avocado Salsa for a refreshing finish.
