– 4 teaspoons powdered sugar

– 1 cup cold heavy cream

Instructions

1-First, prepare the crust: Preheat your oven to 350Β°F and spray a 9-inch deep-dish pie pan. Finely grind 20 chocolate sandwich cookies with filling intact, mix in 3 tablespoons of melted unsalted butter, and press it into the pie pan. Bake for 10 minutes, then let it cool completely that flaky crust is the base for that dreamy chocolate filling!

2-Next, for the filling base: Whisk 1 1/3 cups granulated sugar and 4 large eggs in a saucepan over medium-low heat until it reaches 160Β°F and coats a spoon. Remove from heat, stir in 8 ounces of melted bittersweet baking chocolate and 2 teaspoons vanilla extract until smooth, then cool it to about 75Β°F while stirring occasionally. This step ensures your pie is safe and silky, just like in traditional French silk pie recipes.

3-Now, beat 10 tablespoons of room-temperature unsalted butter until it’s fluffy, about 2-3 minutes. Gradually add the cooled chocolate mixture and beat on high for 5 minutes until light and fluffy your electric mixer will be your best friend here! In another bowl, whip 1 1/3 cups cold heavy cream with 4 teaspoons powdered sugar until stiff peaks form, then gently fold it into the chocolate mix.

4-Assemble the pie by pouring the filling into the cooled crust and smoothing it out. Chill for at least 6 hours, or up to 2 days, for that perfect set.
