Ingredients
1 (8 oz) log of fresh goat cheese
½ cup all-purpose flour
2 large eggs, room temperature, beaten
¾ cup panko breadcrumbs
Flaky sea salt (amount as needed)
Truffle honey or regular honey (to taste for serving)
1 tablespoon pistachios, roughly chopped
Neutral oil (such as grapeseed, sunflower, canola, or vegetable oil) for frying (enough to fill a small saucepan)
Instructions
1-Cut the goat cheese log into 24 equal pieces, approximately 1 heaping teaspoon each, and roll each piece into a small, round ball.
2-Toss the goat cheese balls in the flour to coat them completely.
3-Dip the floured balls into the beaten eggs, making sure they are fully covered.
4-Roll the egg-coated balls in the panko breadcrumbs until they are evenly coated.
5-Freeze the coated balls for 20 minutes to help them hold their shape during frying don’t skip this part!
6-Heat neutral oil in a small saucepan to 375-400°F (191-204°C).
7-Fry 4-5 balls at a time for about 20 seconds, or until they start to pop and turn light golden brown on all sides, while keeping the oil temperature steady by frying in small batches.
8-Use a spider skimmer to remove the fried balls and drain them on a paper towel-lined rack.
9-Immediately sprinkle the hot balls with flaky sea salt.
10-Serve by drizzling with truffle honey or regular honey and sprinkling with chopped pistachios; enjoy them right away or at room temperature.
