Ingredients

– 1 cup jasmine rice

– 2 tablespoons unsalted butter

– 3 cloves garlic, minced

– 2 cups chopped kale

– 1 ½ cups vegetable broth

Instructions

First Step: Rinse the Rice Rinse 1 cup of jasmine rice under cold water until the water runs clear to remove excess starch, ensuring fluffy and separate grains once cooked.

Second Step: Sauté Garlic in Butter In a medium saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant and lightly golden, taking care not to burn the garlic to maintain its sweet flavor.

Third Step: Toast the Rice Add the rinsed rice to the saucepan, stirring to coat the grains with the garlic butter mixture. Toast the rice lightly for about 2 minutes to enhance its nutty aroma.

Fourth Step: Cook the Rice Pour in 1 ½ cups of vegetable broth, bring it to a boil, then reduce heat to low. Cover the saucepan and simmer gently for 15 minutes or until the rice is tender and all liquid has been absorbed.

Fifth Step: Prepare and Add the Kale While the rice cooks, wash and chop 2 cups of kale into bite-sized pieces. When the rice is nearly done, stir in the kale, cover the pot, and continue cooking for 3-5 minutes until the kale wilts and softens slightly.

Final Step: Fluff and Season Remove the pot from heat, fluff the garlic butter rice with kale using a fork, and adjust seasoning with salt and pepper to taste. Optionally, stir in 1 to 2 tablespoons of unsalted butter for extra richness. Serve warm, garnished with toasted nuts or fresh herbs for added texture and flavor. For vegan or gluten-free preferences, substitute ingredients accordingly.
