πŸ₯© Tender, juicy steak bites seared to perfection and coated in a rich garlic butter sauce for an irresistible flavor combination
πŸ§„ Quick and easy to make in just 20 minutes, these bite-sized morsels are perfect as an appetizer or main course

  • Total Time: 20 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale

1/2 tablespoon avocado oil for quick, hot searing

2 pounds steak for hearty, juicy bites

2 teaspoons salt to season the beef

1/2 teaspoon freshly ground black pepper for heat and complexity

1/2 teaspoon red pepper flakes for a touch of heat

2 tablespoons butter or ghee for rich garlic butter sauce

6 cloves minced garlic for vibrant flavor

1/4 cup chopped parsley to brighten the dish

green onion for garnish

Instructions

1-First Step: Prep and mise en place Take the steak out of the fridge 10-15 minutes before cooking to reduce chill for more even searing. Pat the steak dry well with paper towels to remove surface moisture; this helps form a brown crust. Mince 6 garlic cloves, chop 1/4 cup parsley, and slice green onions for garnish. Measure out 1/2 tablespoon avocado oil and 2 tablespoons butter or ghee so everything is ready to go.

2-Second Step: Season the steak In a large bowl, toss the 1-inch steak pieces with 2 teaspoons salt, 1/2 teaspoon freshly ground black pepper, and 1/2 teaspoon red pepper flakes if using. Mix well to coat each piece evenly so every bite is flavorful. Let it rest for a minute while the pan heats.

3-Third Step: Heat the pan and sear Heat a large skillet over medium-high heat until hot but not smoking. Add 1/2 tablespoon avocado oil and swirl to coat the pan.* Place the steak pieces in a single layer without crowding. If your pan is small, cook in batches to keep high heat and prevent steaming.* Cook 3-4 minutes, stirring occasionally to brown all sides. You want a deep brown crust, not gray.* Remove the browned steak to a plate and repeat with any remaining pieces.

4-Fourth Step: Clear excess water and make the sauce After searing, there may be a little liquid in the pan. Carefully pour off the excess or tilt the pan and blot with paper towels to remove it. Return the skillet to medium heat and add 2 tablespoons butter or ghee. Once melted, add 6 cloves minced garlic and sautΓ© for about 1 minute until fragrant but not browned.

5-Fifth Step: Combine and finish Return the steak to the pan and stir for 1-2 minutes to coat each piece in the garlic butter sauce. Remove the skillet from the heat and stir in 1/4 cup chopped parsley. Garnish with sliced green onions and serve immediately.

Notes

πŸ₯© Choose tender cuts like top sirloin, New York strip, or ribeye and trim visible fat for the best results
πŸ§„ Use fresh garlic for the most robust flavor – pre-peeled cloves can save time but fresh is worth it
πŸ”₯ Don’t overcrowd the pan – cook in batches to ensure proper browning and avoid steaming the meat
