Instructions

1-First, combine the dry ingredients in your food processor: 2 cups bread flour, 1 teaspoon instant yeast, 2 tablespoons sugar, and Β½ teaspoon salt. Add 1-2 cloves of finely minced garlic for that bold flavor. Then, pour in 12 ounces of cottage cheese and process for 15-20 seconds until the dough forms a shaggy texture.

2-If the dough seems too dry, add water one tablespoon at a time until it sticks together. Once mixed, scrape the dough into a bowl, cover it loosely, and let it rise for about 1 hour at room temperature until it puffs up. For a deeper flavor, you can refrigerate it for 8-48 hours and then let it warm up before continuing.

3-After rising, gently divide the dough into 4 pieces and stretch each into rounds without pressing too hard. Let them rest for another 15-20 minutes.
