Ingredients

– 2 cups bread flour

– 1 tsp instant yeast

– Optionally, 1 tbsp olive oil or coconut oil for cooking

Instructions

1-In a food processor, combine 2 cups bread flour, 1 tsp instant yeast, 2 tbsp sugar, Β½ tsp salt, and minced garlic from 1-2 cloves.

2-Add 12 oz low-fat cottage cheese and process for 15-20 seconds until the dough forms a shaggy and rough surface. If the dough is too dry, add water one tablespoon at a time until it comes together.

3-Scrape the dough into a clean bowl, cover loosely, and let it rise at room temperature for 1 hour until puffy.

4-For an overnight rise, cover the bowl loosely and refrigerate for 8 to 48 hours, then bring the dough to room temperature before shaping. For a quick rise, deflate the dough completely and allow it to rise in a warm area for 2-3 hours until doubled.

5-Gently scrape the dough from the bowl, divide it into 4 pieces, and stretch each piece into rounds by hand.

6-Let the shaped dough rise for an additional 15-20 minutes before cooking.

7-Preheat a skillet with 1 tbsp olive oil or coconut oil over low to medium heat.

8-Cook each flatbread for 2-3 minutes per side, using a lid to reduce oil splatter and speed cooking, until the flatbread is cooked through and golden brown.

9-Repeat with the remaining dough and serve warm.
