🥗 Greek yogurt adds creamy tang while keeping the salad light, making it a protein‑rich, low‑calorie option.
🍇 Sweet grapes and crunchy almonds create texture, turning a simple chicken salad into a satisfying meal.

  • Total Time: 15 minutes
  • Yield: approximately 4 servings (about 1½‑cup per serving)

Ingredients

– 2 cups shredded cooked chicken

– 1/2 cup fresh grapes, halved

– 1/2 cup celery, finely chopped

– 1/4 cup red onion, diced

– 1/2 cup plain yogurt

– 2 tablespoons salted almonds, chopped

– 1/2 tablespoon Dijon-style mustard

– 1 tablespoon fresh parsley, chopped

– sea salt to taste

– 1/4 teaspoon black pepper

– 1 teaspoon honey (optional) for a sweeter profile

Instructions

1-In a large mixing bowl, combine the shredded chicken, halved grapes, chopped celery, diced red onion, yogurt, chopped almonds, mustard, and parsley.

2-Season with sea salt and black pepper, then toss until evenly coated and creamy.

3-Taste and adjust seasoning, adding more yogurt, salt, pepper, or honey if desired.

4-Serve immediately, or refrigerate in an airtight container the salad keeps for 3 5 days.

5-For adaptations, swap chicken with chickpeas for a vegan option or use gluten-free seasonings as needed.

Notes

🍯 Add honey for extra sweetness if you enjoy a slightly sweeter profile.
🧂 Use pre‑pulled rotisserie chicken to cut prep time and keep the salad truly quick.
🥜 Swap almonds for pecans or pistachios for a different nutty flavor and texture.
