Ingredients

– 2 slices of sourdough bread

– Mayonnaise (enough to spread thinly on the outside of both bread slices)

– Dijon mustard (enough to spread on the inside of one bread slice)

– 28 to 56 grams (1 to 2 ounces) grated sharp cheddar cheese

– 28 to 56 grams (1 to 2 ounces) grated Gruyère or raclette cheese

– Butter (enough to coat the skillet for cooking)

– Gluten-free sourdough slices

– 28 to 56 grams grated sharp cheddar and Gruyère

– Vegan cheese shreds

– Mayonnaise and Dijon mustard

– Plant-based mayo and mustard

Instructions

1-Gather all ingredients and equipment, including your nonstick or cast-iron skillet, and heat it over medium-low heat.

2-Spread a thin layer of mayonnaise on the outer sides of both bread slices for that golden crust.

3-Flip one bread slice and spread Dijon mustard on the inside for a tangy flavor boost.

4-Layer the grated sharp cheddar and Gruyère or raclette cheese on the mustarded side, using 28 to 56 grams of each for the right amount of gooeyness.

5-Place the other bread slice on top, with the mayo side facing out, to form the sandwich.

6-Melt enough butter in the skillet to coat the bottom, then add the sandwich and cover with a lid. Cook for 2 to 3 minutes until the bottom is golden and crispy.

7-Carefully flip the sandwich, cover again, and cook for another 1 to 3 minutes until the other side is golden and the cheese is fully melted.

8-Adjust the heat as needed to avoid burning, then remove from the pan, let it cool slightly, and slice into triangles for serving.

Notes

🔥 Use medium-low heat and cover the pan to trap steam – this ensures the cheese melts perfectly without burning the bread
