Ingredients
– 2 pounds ground beef
– 1/2 cup crushed tortilla chips
– 3/4 cup milk
– 3 fresh jalapeños, seeded and finely diced
– 8 ounces cheddar cheese block, finely diced
– 1 tablespoon paprika
– 2 teaspoons garlic powder
– 2 teaspoons kosher salt
Instructions
1- Place crushed tortilla chips in a large bowl and add milk. Let them soften for about 10 minutes until the milk is absorbed.
2- Add ground beef, finely diced jalapeños, finely diced cheddar cheese, paprika, garlic powder, and kosher salt to the mixture. Mix well to combine everything thoroughly.
3- Scoop about 1/3 to 1/2 cup of the mixture and form it into a meatball. Repeat until all the mixture is used.
4- Refrigerate the formed meatballs for 30 minutes to firm them up.
5- Prepare a grill for two-zone cooking with one hot side and one cool side, setting the temperature to medium (350-375°F / 175-190°C).
6- Place the meatballs on the cool side of the grill, close the lid, and grill for 25-35 minutes until the internal temperature reaches 165°F (74°C).
7- Remove the meatballs from the grill and let them cool slightly before serving.
