4 whole beef short ribs

Salt and freshly ground black pepper to taste

2 cups chopped white onions

1 cup chopped carrots

1 cup chopped celery

2 cloves garlic, minced

1 12-ounce can of stout beer

¼ cup tomato paste

4 sprigs fresh thyme

1 teaspoon white sugar

3 cups beef stock (or beef broth) to cover

Freshly chopped parsley for serving

Instructions

1-First, get everything ready by preheating your oven to 325°F and seasoning the 4 whole beef short ribs with salt and freshly ground black pepper. This sets the stage for a flavorful sear that locks in juices. In a large Dutch oven, brown the ribs on all sides over medium-high heat in batches to avoid crowding, then set them aside.

2-Next, remove any excess fat from the pot and sauté the 2 cups chopped white onions, 1 cup chopped carrots, 1 cup chopped celery, and 2 cloves minced garlic until they soften and release their aroma. Pour in the 1 12-ounce can of stout beer to deglaze, scraping up those tasty browned bits from the bottom of the pot.

3-Stir in the ¼ cup tomato paste, 4 sprigs fresh thyme, 1 teaspoon white sugar, and 3 cups beef stock, seasoning with a bit more salt and pepper as needed. Return the ribs to the pot, bring it to a simmer, cover, and pop it in the oven. Braise for 2.5 to 3 hours until the ribs are fork-tender, then remove from the oven, discard the thyme sprigs, and skim off excess fat.
