Instructions
1-Preheat a small non-stick fry pan over medium-low heat to get it ready for even cooking.
2-Place the cheese slices between the two slices of whole wheat bread to build your sandwich.
3-Once the pan is warm, drizzle 1 teaspoon of the extra virgin olive oil into the pan and tilt it to spread evenly for a nice base.
4-Place the sandwich in the pan and cover with a lid to help the cheese melt faster.
5-Cook until the bottom is golden brown, which takes about 2 minutes, for that perfect crisp.
6-Lift the sandwich with a spatula, then add the remaining 1 teaspoon of extra virgin olive oil to the pan.
7-Flip the sandwich and cook the other side until itβs golden brown, again about 2 minutes.
8-Serve immediately to enjoy it at its best. Pair it with a simple soup for a full meal.
