Ingredients

– ½ to 1 lime freshly squeezed juice

– 2 to 3 tablespoons soy sauce

– 1 to 2 teaspoons minced garlic

– ¼ cup pineapple juice or orange juice

– ½ teaspoon oregano

– ½ teaspoon cumin

– ½ teaspoon white pepper

– 1 teaspoon onion powder

– 1 pound skirt steak or preferred cut of steak

– 4 burrito-sized flour tortillas

– 1 small chopped onion (optional)

– 1 cup shredded cheese such as Monterey Jack or crumbled queso fresco

– 1 cup cooked rice

– 1 cup chopped avocado or guacamole

– 1 to 2 cups pinto beans (refried or black beans)

– ¼ cup chopped cilantro

– ½ cup salsa verde (prepared as below)

– ¾ pound ripe tomatillos (around 6 large or 10 small), husked and cleaned

– 1 jalapeño

– 1 small unpeeled white onion

– 1 to 2 unpeeled garlic cloves

– 2 to 3 tablespoons minced cilantro

– Juice of 1 lime or more to taste

– Salt to adjust (amount as needed for seasoning)

Instructions

1-First: marinate the steak in a mix of freshly squeezed lime juice, soy sauce, minced garlic, pineapple or orange juice, oregano, cumin, white pepper, and onion powder for at least 2 hours. 2-Preheat: a grill to medium-high heat, pat the steak dry, and oil the grate before grilling for 3 to 4 minutes per side. Let it rest for 10 minutes, then slice thinly. For the salsa verde, roast the tomatillos, jalapeño, onion, and garlic on a hot griddle until blackened, about 10 minutes, then blend with cilantro, lime juice, and salt.

3-Assembling and Cooking the Burritos: Lay each flour tortilla flat and add sliced steak in the center.
Layer on cooked rice, shredded cheese, chopped avocado or guacamole, pinto beans, chopped cilantro, chopped onion if using, and salsa verde.
Fold the bottom of the tortilla over the filling, then fold in the sides and roll tightly.
Heat on a skillet until toasted or bake wrapped in foil at 350°F for 20 minutes.
