Instructions
1-First, mix the 1 lb of chicken pieces with 1 tablespoon Shaoxing wine, 1/4 teaspoon salt, and 2 teaspoons cornstarch in a bowl to marinate. This helps the chicken absorb flavors and stay tender. In another bowl, combine the sauce: 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1 tablespoon Shaoxing wine, 1 teaspoon fermented black beans, 2 teaspoons sugar, and 1/2 teaspoon cornstarch.
2-Next, heat 1 tablespoon of peanut oil or vegetable oil in a large skillet over high heat. Add the marinated chicken and cook until golden, about 2 to 3 minutes per side, then set it aside. This searing step locks in the juices and adds that great color.
3-Now, in the same pan, add the remaining oil along with the white parts of the 6 scallions, 5 sliced garlic cloves, 1/2 inch julienned ginger, and 2 tablespoons fermented black beans.
