Ingredients

– 1 lb boneless skinless chicken thigh or breast, cut into 1-inch pieces

– 2 tablespoons peanut oil or vegetable oil for stir fry

– 6 scallions, sliced into 1-inch pieces (white and green parts separated) for stir fry

– 5 garlic cloves, smashed and sliced for stir fry

– 1/2 inch ginger, julienned for stir fry

– 2 tablespoons fermented black beans for stir fry

– 2 stalks celery, sliced on the bias into 1/2-inch thick pieces for stir fry

– 2 hot chili peppers (such as Anaheim or Fresno), thinly sliced on the bias for stir fry

Instructions

1-First, mix the 1 lb of chicken pieces with 1 tablespoon Shaoxing wine, 1/4 teaspoon salt, and 2 teaspoons cornstarch in a bowl to marinate. This helps the chicken absorb flavors and stay tender. In another bowl, combine the sauce: 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1 tablespoon Shaoxing wine, 1 teaspoon fermented black beans, 2 teaspoons sugar, and 1/2 teaspoon cornstarch.

2-Next, heat 1 tablespoon of peanut oil or vegetable oil in a large skillet over high heat. Add the marinated chicken and cook until golden, about 2 to 3 minutes per side, then set it aside. This searing step locks in the juices and adds that great color.

3-Now, in the same pan, add the remaining oil along with the white parts of the 6 scallions, 5 sliced garlic cloves, 1/2 inch julienned ginger, and 2 tablespoons fermented black beans. Stir for about a minute to bring out the aromas. Then, add the green parts of the scallions, 2 stalks of sliced celery, and 2 sliced hot chili peppers, and stir-fry for 2 minutes until they’re crisp yet soft.
