Instructions

First, prepare all ingredients by seasoning the lamb with salt and pepper, then heat 1 tablespoon of oil in a large pot over medium heat. Brown the lamb in small batches and set it aside to build that rich flavor.

2-Cooking the onions and making the base: Next, add the remaining oil to the pot and cook the sliced onion until tender, about 5 minutes, then add it to the lamb. Use about 2 tablespoons of beef broth to deglaze the pot, scraping up those tasty brown bits from the bottom until the liquid evaporates. Whisk in butter and flour, cooking for one minute on low heat to create a smooth base.

3-Stirring in liquids and simmering: Gradually stir in the stout beer and the rest of the beef broth, whisking until it thickens like gravy. Return the lamb and onions to the pot with bay leaves, then cover and simmer for about 90 minutes until the lamb is tender. Add the carrots, potatoes, and thyme, cooking for another 25 minutes until the veggies are soft, and finish by stirring in chopped parsley before serving with Irish soda bread.
