Instructions

1-Dissolve 4 tablespoons dry active yeast in 3 cups warm water. Let it sit a moment to activate.

2-Whisk in 1/4 cup granulated sugar, 1/3 cup mild-flavored oil, 1 tablespoon salt, 2 eggs, and optional 1/3 cup instant mashed potato flakes.

3-Gradually add 7 1/2 cups bread flour, kneading for 6 minutes until smooth and elastic.

4-Rest dough 10 minutes covered.

5-Divide into 8 equal pieces (about 10 ounces each). Shape each into 12-inch logs.

6-Spray tops with water, coat generously with Italian herb blend (1 tbsp oregano, 2 tbsp garlic powder, 1 tbsp dried parsley, 2 tbsp Parmesan).

7-Place on silicone mats or parchment-lined baking sheets. Score each log 3 to 4 times lengthwise.

8-Let rise until tripled in size, up to 1 hour.

9-Sprinkle shredded Colby Monterey Jack cheese on top.

10-Bake at 375Β°F (190Β°C) for 15 to 18 minutes until golden. Cool before removing.
