– ½ large red onion or 1 medium yellow onion, chopped (approximately 4 oz or 113 g)

– 6 cloves garlic (about 1 oz or 28 g)

– 5 stalks scallion (about 2 oz or 57 g)

– ¼ cup white vinegar (60 ml)

– ¼ cup soy sauce (dark soy sauce preferred for color; 60 ml)

– 1 ½ teaspoons sea salt (7.5 ml)

– 1 tablespoon ground black pepper (15 ml)

– 1 tablespoon grated fresh ginger (15 ml)

– 2 tablespoons fresh pimento seeds (allspice; 30 ml)

– 2 tablespoons brown sugar (organic recommended; 30 ml)

– 1 teaspoon freshly grated nutmeg (5 ml)

– 2 tablespoons oil (30 ml)

– 7 sprigs fresh thyme (about 0.5 oz or 14 g)

– Squeeze of lime (from 1 lime, approximately 1 tablespoon or 15 ml juice)

Instructions

1-First, combine all the ingredients in a high-speed blender. Throw in those 4 organic scotch bonnet peppers, chopped onion, garlic, scallions, and the rest like white vinegar, soy sauce, and spices. Blend it all for about 1 minute until it’s fully mixed and smooth.

2-Once blended, pour the sauce into a clean jar and pop it in the fridge. You can use it right away, but letting it sit for a bit lets the flavors deepen.
