🍊 Create an elegant dessert that combines the bright flavors of fresh citrus with tart cranberries for a perfect balance of sweet and tangy
🍰 Impress your guests with this sophisticated Charlotte Russe featuring a delicate ladyfinger crust and creamy mousse-like filling

  • Total Time: 1 hour 35 minutes
  • Yield: 8 servings

Ingredients

– 7 ounces ladyfingers for the crust base

– 1 cup orange juice for dipping ladyfingers to add flavor without sogginess

– 8 ounces softened cream cheese for the filling

– 2 small ripe bananas for adding natural sweetness and smooth texture to the filling

– Zest of one orange for infusing bright citrus flavor into the filling

– 1¼ cups heavy whipping cream for whipping to create a mousse-like consistency in the filling

– 12 ounces fresh cranberries for the topping, bringing tartness and color

– ¾ cup granulated sugar for sweetening the topping during simmering

– 1 cup orange juice for combining with cranberries and sugar for the topping

Instructions

1-First, dip 7 ounces of ladyfingers briefly in 1 cup of orange juice and arrange them in a 9-inch springform pan to form the crust, taking care to avoid sogginess.

2-Next, prepare the filling by whipping together 8 ounces of softened cream cheese, 2 small ripe bananas, the zest of one orange, and 1¼ cups of heavy whipping cream until it reaches a mousse-like consistency.

3-For the topping, combine 1 cup of orange juice, 12 ounces of fresh cranberries, and ¾ cup of granulated sugar in a saucepan, boil it, then simmer for 15-20 minutes until thickened, blending smooth if desired.

4-Preheat your oven to 180°C (350°F) and prepare a baking tray lined with parchment paper if needed, though we’re focusing on the springform pan for the crust.

5-Whisk the filling ingredients together until light and fluffy, ensuring the cream cheese and bananas blend smoothly for that perfect mousse texture.

6-Spread the filling inside the ladyfinger crust, then top with half of the cranberry sauce mixture.

7-Chill the assembled cake in the refrigerator for at least one hour to set, allowing flavors to meld.

8-Finally, slice and serve, garnishing with the reserved cranberry sauce for an extra pop of color and taste.

Notes

🍯 Dip ladyfingers briefly in orange juice – just 1-2 seconds per side to prevent sogginess
🍌 Use very ripe bananas for the best natural sweetness and smooth texture in the filling
🔪 Make the cranberry sauce ahead of time and let it cool completely before assembling for best results
