Ingredients
4 cod fillets, skinless, about 1-inch thick
1 tablespoon flour
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon thyme
1/4 teaspoon oregano
1/8 teaspoon cayenne pepper
3/4 teaspoon salt or to taste
3/4 teaspoon black pepper
5 tablespoons butter, divided into 1 tablespoon pieces
1 tablespoon olive oil
1 tablespoon minced garlic
1 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons chicken broth
1 tablespoon chopped parsley for garnish
Instructions
1-First, season the cod fillets by mixing the flour, paprika, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper in a bowl, then coat the fillets lightly for a nice crust.
2-Next, heat 1 tablespoon of the butter and the olive oil in a skillet over medium heat; add the minced garlic and sauté for about 1 minute until it smells great but doesnt burn.
3-Then, place the seasoned cod in the skillet and cook for 2-3 minutes per side until it starts to golden, adding the remaining butter as it melts to create that rich sauce.
4-After that, stir in the fresh lemon juice and chicken broth to deglaze the pan, letting the sauce simmer for another minute to blend the flavors.
5-Finally, remove from heat, garnish with chopped parsley, and let it rest for a minute before serving with your favorite sides like rice or veggies.
