Ingredients

Instructions
1-First, cut one lemon into small cubes, keeping the peel on for that extra zest and texture.
2-Next, zest the yellow part of the remaining three lemons, making sure to avoid the bitter white pith underneath.
3-Then, peel those three lemons and chop their flesh, carefully removing all membranes and seeds to keep the jam smooth.
4-To reduce bitterness, cover the lemon cubes and zest with water, bring it to a boil, and simmer for 10 minutes; drain and discard the water, then repeat with fresh water.
5-Return the lemon cubes and zest to the pot, add the chopped lemon flesh, two cups of sugar, and two cups of water.
6-Bring everything to a boil, then reduce the heat to medium-low and simmer uncovered for about 45 minutes, stirring occasionally and skimming off any foam that rises.
7-Stir in the two tablespoons of lemon juice and simmer for another 5 minutes. Let the jam cool in the pot to thicken naturally.
