🧀 Mac and Cheese Bites Quick Homemade Party Appetizer Recipe offers a crispy, golden exterior with a melty, cheesy center that’s perfect for entertaining.
🍴 These bites are a delicious way to use leftover mac and cheese and make for an irresistible snack or party appetizer.

  • Total Time: 5 hours 35 minutes
  • Yield: About 40 bites

Ingredients

– 0.75 pounds elbow macaroni

– 3 cups grated sharp white cheese (e.g., sharp white cheddar)

– ¼ cup unsalted butter, cubed

– ¼ cup all-purpose flour

– 2 cups whole milk

– ½ teaspoon garlic powder

– ½ teaspoon onion powder

– Salt and pepper to taste

– Prepared chilled mac and cheese (from above)

– 2 cups all-purpose flour

– 5 large eggs, beaten

– 3 cups panko bread crumbs

– 1 cup Italian style bread crumbs

– 1 teaspoon salt

– Vegetable oil for frying (3-4 inches deep)

Instructions

1-First, gather your ingredients and measure them out to avoid any rush. Cook the 0.75 pounds elbow macaroni according to package instructions, then drain it well. In a saucepan, melt the ¼ cup unsalted butter over medium heat and whisk in the ¼ cup all-purpose flour to create a roux this is your base for that creamy sauce.

2-Next, slowly add the 2 cups whole milk while whisking constantly until the mixture thickens. Stir in the 3 cups grated sharp white cheese along with ½ teaspoon garlic powder, ½ teaspoon onion powder, and salt and pepper to taste until everything is smooth and melty. Combine this cheesy sauce with the cooked macaroni for a rich base.

3-Chilling and Shaping the Mixture: After mixing, cool the mac and cheese and refrigerate it for at least 4 hours or overnight this step is crucial for firm bites. Once chilled, shape the mixture into 1.5-inch balls, then chill them again until you’re ready to bread. For the best results, use good, melty cheese and keep the mixture cold but not frozen.

4-Now, set up your breading station with 2 cups all-purpose flour in one bowl, 5 large eggs beaten in another, and a mix of 3 cups panko bread crumbs, 1 cup Italian style bread crumbs, and 1 teaspoon salt in the third. Heat vegetable oil in a deep pan to 360-375°F, using a thermometer to keep it just right don’t use olive oil here, go for a high smoke point option like vegetable or peanut oil.

5-Coat each ball first in flour, then in the beaten eggs, and finally in the breadcrumb mixture, pressing lightly to make sure it sticks. Fry the balls in small batches for about 3 minutes until they’re golden brown, then drain them on paper towels. Serve them hot for that ultimate crispy outside and melty inside experience.

Notes

🧀 Use good melty cheese for the creamiest bites.
❄️ Keep mac and cheese cold but not frozen before shaping.
🌡️ Use a high smoke point oil and maintain oil temperature for perfect frying.
