Ingredients
1 large head of romaine lettuce
1–2 medium apples kept in juice of 1/2 lemon + 1/2 cup water to prevent browning
3–4 seedless mandarins
1/2 small red onion finely chopped
1/2 cup walnuts optional
1/4 cup craisins dried cranberries
1/4 cup crumbled feta cheese optional
1/2 cup sugar
3/4 cup extra-virgin olive oil
1 teaspoon salt
1/4 cup balsamic vinegar
Instructions
1-Wash, chop, and thoroughly dry romaine lettuce; transfer to a salad bowl.
2-Peel and separate mandarins; add to the salad bowl.
3-Chop apples into 1/2-inch pieces; soak in lemon water if not serving immediately.
4-Add chopped onion, walnuts (if using), and craisins on top of the salad.
5-Pour dressing on the salad to taste.
6-Sprinkle with crumbled feta cheese (if using) after tossing.
