Instructions
1-First, in a mixing bowl, break 2 medium eggs and add ยผ cup milk, 2 to 3 tablespoons finely chopped onions, 1 to 2 chopped green chilies (if using), 2 tablespoons finely chopped coriander leaves, โ teaspoon turmeric powder, ยผ to 1 teaspoon red chili flakes, โ teaspoon roasted cumin powder, โ teaspoon garam masala, and โ teaspoon salt. Whisk until the mixture is frothy and well combined.
2-Optionally, spread 4 tablespoons mint chutney, hot sauce, or pesto on one side of each of the 4 thick bread slices to boost the flavor.
3-Heat a non-stick pan with 1ยฝ tablespoons unsalted butter over medium heat, ensuring even coverage for golden results.
4-Dip each bread slice briefly into the egg mixture, coating both sides and shaking off any excess to avoid sogginess.
5-Place the coated slices in the pan and cook on medium heat until one side is golden and crispy, about 2-3 minutes, then flip and cook the other side similarly, pressing gently for even cooking.
6-For a custardy texture, spoon extra egg mixture onto the slices while they cook. Once done, remove from the pan, sprinkle with ยผ teaspoon chaat masala if desired, and serve hot.
