4 cups milk

4 ounces piloncillo, plus more to taste

1 cinnamon stick

1 ½ cups warm water

½ cup masa harina

2 teaspoons vanilla extract

1 pinch salt

Ground cinnamon for garnish

Instructions

1-Gather all ingredients and measure them out: 4 cups milk, 4 ounces piloncillo, 1 cinnamon stick, 1 ½ cups warm water, ½ cup masa harina, 2 teaspoons vanilla extract, and 1 pinch salt.

2-In a medium saucepan, add the 4 cups milk, 4 ounces piloncillo, and 1 cinnamon stick. Warm it over low-medium heat, stirring frequently until the piloncillo dissolves and everything blends smoothly.

3-Remove and discard the cinnamon stick, straining if needed to keep the mixture clear.

4-In a small bowl, whisk together the 1 ½ cups warm water and ½ cup masa harina until it’s smooth and free of lumps.

5-Add this masa mixture to the saucepan along with the 2 teaspoons vanilla extract and 1 pinch salt, whisking everything to combine.

6-Bring the mixture to a simmer, then reduce heat to low and cook, stirring often, for 25-30 minutes until it’s thick, creamy, and coats the back of a spoon.

7-Serve hot, garnished with ground cinnamon for that final touch.

Notes

🍲 Heat milk mixture gently over low-medium heat to prevent burning.
🥄 Whisk continuously during cooking to maintain smooth, velvety texture and avoid graininess.
🌱 For a vegan version, substitute milk with almond, pea, or oat milk and use dark brown sugar if piloncillo is unavailable.
